The winter is my favorite time of year, there is less daylight, so it's easier to sleep more.  The NBA, and the cooler temperatures allow for more cooking in the Kitchen. I attended a cookout this Fall and one of the guest brought Fried Apple Pies.  It brought back many memories of pies past. 
I found this recipe many years ago and I've enjoyed it many times.  Fried Pies are Absolutely Perfect, a single serving of delicious pie, fried into a burrito type sandwich.  I like the blackberry pies myself, but most of my friends go for the apple & cherry.

Fried Pies

6 cups self-rising flour
2 cups milk
½ cup shortening

Combine all ingredients to make a stiff batter.
Pinch off about 2 tablespoons of batter and roll out thin.
Fill center with favorite fruit (apples, cherries, blackberries, etc.).
Fold over and seal edges with fork.
Cut excess crust off with a pizza cutter.
Fry in hot oiled skillet until brown.

Icing

1—cup confectioners sugar
2—tsp. vanilla
Milk

Mix sugar, vanilla and very small amount of milk
in small bowl with whisk until it reaches a smooth
and creamy texture. Spread on top of fried pies
while they are still warm.


Tip: a high quality jar of preserves will also work,
but be careful!!! jelly will melt and make a mess
(unfortunately I found out the hard way).
