Fried Pies
6 cups self-rising flour
2 cups milk
½ cup shortening
Combine all ingredients to make a stiff batter. Pinch off about 2 tablespoons of batter and roll out thin. Fill center with favorite fruit (apples, cherries, blackberries, etc.). Fold over and seal edges with fork. Cut excess crust off with a pizza cutter. Fry in hot oiled skillet until brown.
Icing
1—cup confectioners sugar
2—tsp. vanilla
Milk
Mix sugar, vanilla and very small amount of milk in small bowl with whisk until it reaches a smooth and creamy texture. Spread on top of fried pies while they are still warm.
Tip: a high quality jar of preserves will also work, but be careful!!! jelly will melt and make a mess (unfortunatley I found out the hard way).
