Cowboy Cookies

3 cups (405 g.) all-purpose flour
1 tablespoon (5 g.) baking powder
1 tablespoon (6 g.) baking soda
1 tablespoon (15 g.) ground cinnamon
1 tsp. (6 g.) salt
3 sticks butter (room temperature)
1 1/2 cups (315 g.) sugar
1 1/2 cups (285 g.) light-brown sugar
3 eggs
1 Tbls. (14 g.) vanilla extract
3 cups (531 g.) semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans

Preheat oven to 350 degrees F.
Mix flour, baking powder, baking soda, cinnamon and salt in bowl. Beat butter on medium speed until smooth. Gradually beat in sugars. Wisk eggs and vanilla together and add alternately to batter with flour mixture until combined. Add chocolate chips, oats, coconut and pecans.

Drop 1/4 cup dough 3 inches apart onto ungreased baking sheets, lined with parchment paper.

Bake for 12 to 15 minutes, until edges are lightly browned.
Place on a wire rack to cool
