K.Jr.s Chili Powder
3 - ancho chiles, stemmed, seeded, & sliced
3 - casacabel chiles, stemmed, seeded, & sliced
3 - dried arbol chiles, stemmed, seeded, & sliced
3 - pasilla chiles, stemmed, seeded, & sliced
8 - japones chiles, stemmed, seeded, & sliced
12 - pequin chiles, stemmed, seeded, & sliced
8 - dried cayenne peppers, stemmed, seeded, & sliced
3 - tbls. whole cumin seeds
2 - tbls. garlic powder
1 - tbls. dried oregano
1 - tsp. Paprika
Remove stems & seeds from all chiles & peppers
cut into strips with scissors.
Place all processed chiles, peppers and cumin seeds in
a preheated non-stick pan over medium heat.
Cook slowly, moving constantly until you smell
the cumin toasting (approx. 3 to 5 min.).
Allow to cool completely. Place all ingredients
into a food processor and process into a fine powder.
Store in an airtight container.
