Boston Baked Beans
2 – pounds white beans
1 – tsp baking soda
1 – large yellow onion (chopped)
1 – pound bacon
8 – tbls sugar
2/3 – cup molasses
2 – tsp dry mustard
4 – tsp salt
½ - tsp black pepper
Preheat oven to 300°
Wash the beans and soak overnight
cook the beans with the baking soda, drain and rinse
place the onion in the bottom of a 3-Quart Dutch oven
add half of the uncooked bacon
add the beans and top with bacon
mix the sugar, molasses, salt, mustard
pepper and pour over the beans
add enough water to barely cover the beans do not stir!
Bake the beans covered for 6 hours
add a little bit of water occasionally
don’t make the beans wet.
